The girls and I just made an amazing tasting smoothie. This smoothie may just become my breakfast in the morning or be on the snack list from now on. Here are the ingredients if you want to try making this yourself.
1 Banana, sliced
Handful of strawberries, diced
1 Small fuji apple, diced (skin and core removed)
Flax seed (I used 6 tablespoons organic cold milled golden flax but you can use less or none at all)
Peanut Butter (about 3 tablespoons, more or less to taste)
Chobani vanilla flavored greek yogurt (about 3 tablespoons, more or less to taste)
Milk (enough to achieve the consistency that you like)
Mix all of the ingredients in a blender and blend away until you have a delicious tasting smoothie. Enjoy!
This made enough for the girls and me to each have a glass.

All grown up
Well as the only pics that I have on here of the girls are from a long time ago, I figured I would give a little update on them and give you guys some new pics. Be prepared to be blown away by cuteness .
My oldest is now 5 and getting ready to start kindergarten, I have no idea when/how she got to be so big, lol. My youngest is 3 and full of mischief. Both girls are super smart and get themselves into trouble because of this, as I am sure all kids do. I am amazed every day that God saw fit to give me these two wonderful girls.

Sliding down the snow covered slide onto snow covered ground allows for faster and longer sliding. You can go from sitting to standing and still keep sliding how cool is that :-) |

Salted Caramel Apple Filling
While looking for some sourdough Challah recipes I came across a recipe for salted caramel apple filling. I knew from reading the description of this recipe that I had to try this. I mean come on it's apples, caramel and salt what's not to love right. I am so glad that I made this, it's amazing. It goes very well with ice cream, I mean really well. Even people that didn't like carmel (I know it's shocking that those people exist) liked this recipe. The author of the recipe also suggested filling Challah with this and then making french toast with the finished product, which I plan to do. So here's the recipe for you guys to try:
Salted Caramel Apple Filling
1 cup sugar
1/2 cup water
4 tablespoons butter
1/2 cup heavy cream
1 1/4 teaspoons sea salt
3 medium apples, peeled, cored and cubed
1 teaspoon cinnamon
1/4 teaspoon grated nutmeg
!/4 teaspoon ground ginger
1 tablespoon flour
Squeeze of lemon juice
DIRECTIONS:
1. In a bowl, Combine the chopped apples with the cinnamon, nutmeg, ginger, lemon juice and flour. Set aside.
2. Pour the water around and over the sugar in a heavy-bottomed saucepan. Cover and cook over medium heat until the sugar dissolves (I prefer this over the brushing the sugar off the sides with a wet pastry brush).
3. When the sugar dissolves, turn to high heat, and boil uncovered until the sugar turns a medium brown, about 5 to 7 minutes. Watch it carefully at the end, as it will go from caramel to burnt very quickly. Stand back to avoid splattering, and gradually add the cream and the butter – it will bubble vigorously. Simmer and stir with a wooden spoon until the sauce is smooth and thick, about 2 minutes. Stir in the sea salt.
4. Take pot off heat, let sit about 3 minutes, then stir in the chopped, spiced apples while caramel is still very hot. Let cool to room temperature. If not using immediately, refrigerate in an airtight jar or container.

My how time flies
I can't believe it has been several years since my last post, as the title of this blog says, my how time flies. I guess I should start back to my blogging with a quick recap of what has been going on here, so here it goes.
I have started a healthier lifestyle that includes running, yup I said it.....running. I even ran a half marathon in 2011, never thought I would be able to to do that but I did and I FINISHED ;-) I plan on running a marathon sometime later but let's face it I will be doing that much later (after both kids are in school and I have time to train). For the mean time I am going to keep running my little 5k races and enjoy every second of it. The next race I have coming up is Make Tracks for the Zoo in May. The race I am looking the most forward to is in August. I know it is going to most likely be unbearably hot but I get to run from Zombies and it's an obstacle course how much fun is that.
Another big part of my healthier lifestyle is Ninjutsu. I started Ninjutsu back in January 2012 and am completely hooked. The dojo I attend is Kamikokoro Warrior Arts Dojo and the instructor there is absolutely amazing. Never thought I would be participating in a martial art but here I am and I can't get enough.
I have also jumped on the Zumba bandwagon. I know everyone is doing this but let's face it it's so much fun and it works.
What else has been going on, well let's see, the kids have grown up so much. Kaylin is going to be starting kindergarten, yup that's right, she's that old already. Elise is running around getting into everything and has a very sassy disposition, she is very funny. It's hard to believe that I have been blessed with such wonderful kiddos.
I have also really got into baking and cooking. I have made the girls birthday cakes and have really enjoyed that. I have even made a couple of cakes for other people. I love finding new recipes and trying them out and even putting my own little spin on them. My next project is to make a recipe scrapbook for the girls. I will have to see about adding a cooking page onto this blog so that I can post recipes and pictures of some of the food we make.
Well, that's a quick little synopsis of what's been going on, hopefully I will update this blog more frequently from here on out.......we can only hope ;-)
